Frankly, the vast majority of Organic wines are dire. It makes no sense why something as wholesome as gaining organic status almost always results in quality and consistency issues. We’re pleased to say that this is a wine that starts to buck that trend by offering really good quality at a great price.
Region: Italy, Romagna
Grape Type: Sangiovese
Soil: 100% Organic Soils.
Weather conditions: Moderate Mediterranean climate with slightly cooler days due to inland hillside vineyards.
Winemaking / Ageing: The grape varieties are harvested and pressed to extract the must, which is then fermented in steel tanks at 24°C to exalt its fruity flavour. After fermenting, the wine remains on the finest dregs of the yeast for 6-8 months.
Tasting: Organic Sangiovese is ruby in colour. There is a fragrance of violets, wild cherry and a slightly spicy note. Moderate structure, rich acidity and fine, silky tannins.
Food Pairing: Moderately aged cheese, deli meats, homemade pasta with ragout Bolognese. Serve at 18 degrees C.
For Chinese cuisine consider anything rich in meats and starches. It will pair with medium spiced foods, but avoid extreme uses of chilli.
