Lets first introduce the fish so that everyone knows what makes White Trout so special.
What Are White Trout?
White Trout are essentially a subspecies of Rainbow Trout. The flesh is much lighter in color, more delicate in structure and with a more refined flavor. It’s much more difficult to farm and to raise into sizes that are suitable for restaurants.
They are rarely seen outside of 5 star French restaurants or very high end sushi and sashimi restaurants.
It’s Not Sand Trout or Sea Trout!
There are a number of other fish that are sometimes called “White Trout” including Sand Trout, Sand Sea Trout and two other fish from the Gulf Coast of the USA that are both called White Trout. Typically these are very hardy fish that are baked in local food dishes. Within the inland USA there is also a White River Trout that is very common in Arkansas. Again, this is not the same fish.
None of these other shared name fish are suitable for sashimi for example. While our white trout is a delicacy in Japan at the high end sushi restaurants.
Comparison with Salmon
A picture says 1000 words, so it’s best to let a photograph show the visual difference between White Trout and Salmon with both fish being prepared as sashimi.

The White Trout Bundle
We will be bundling sliced fillets together. 4 x 180 gram fillet slices will be shipped to you using SF Express Cold Chain next day delivery for ¥388.88. Before you have a sharp intake of breath and a panic, lets break that pricing down.
The typical wholesale price on White Trout of this standard is between ¥550 and ¥600 per kilogram, based on a restaurant buying large and consistent volumes. At wholesale prices, this 720 gram bundle is already worth ¥396.
Take off the cost of SF Express Cold Chain, packaging, ice packs and wrapping (about ¥52 rmb) and your cost comes down to ¥336.88 or ¥467 per kilo. Factor in the free wine, and even if we only consider the wine at a sale price of ¥108.88 a bottle, it brings your total cost for the fish right down to ¥228 – the equivalent of ¥316.66 a kilo. That’s a huge 42% cheaper than wholesale prices.
