Weather conditions: The majority of South Eastern Australia has the arid and semi-arid climates. The southern coastal parts of the state have a Mediterranean climate with mild wet winters and hot dry summers. The highest rainfall occurs along the southern coasts and the Mount Lofty Ranges (with an average annual rainfall of 1,200 millimetres (47 in) in the vicinity of Mount Lofty)
Wine making / Ageing: All grapes are mecahnically harvested with a mechanical first press. Temperature controlled fermentation done in vats. Filtration and bottling with their own facilities. This wine is ready for drinking now, but could be kept for 2 or 3 years in the right conditions.
Tasting: Watercolour Shiraz is deep red in colour. There are red and dark fruits with subtle notes of spice on the nose. Juicy red berries on the palatte with soft and round tannins.
Food Pairing: This wine should be decanted – click here to learn more. Watercolour Shiraz should be served at around 15 degrees C. It pairs well with food styles from Shandong and the North East. For western food pairings this wine works well with roast beef, very rich fatty dishes, or with strong flavoured cheese.
