Martini Brut
A bottle of Martini Brut. A drier style of sparkling wine from a big brand name. Martini is a great brand for Italian wines and vermouths. this is made from Chardonnay and Glera grapes grown in the Friuli-Venezia Giulia region of Italy. This makes a superb match for fish and Cantonese food.

Soil: The soils of the region vary from the calcium-rich marl and flysch sandstone in the more hilly regions to clay, sand, and gravel in the valley.
Weather conditions: The climate is distinguished with very warm days and chilly nights that help maintain a balance in the grape between acidity and sugar levels and allows the grapes a long, slow growing season. In the summertime, the mean temperature is around 73 °F (22.8 °C) with rainfall averaging 60 inches (1,530 mm). Harvest normally takes place in September.
Winemaking / Ageing: Martini Brut is made from grapes that are collected exclusively by hand and then brought to the cellar for de-stalking and soft pressing. The grapes undergo fermentation at a controlled temperature in stainless steel tanks at 28 degrees C. Maceration finishes at the end of the alcoholic fermentation.
Wine is racked when it is almost completely dry to enhance the classic prosecco style mouthfeel. The fermentation is completed slowly and at much lower temperatures.
Tasting: Apples on the nose and the palate, with soft citrus fruits and thyme on the finish.
Food Pairing: This is a highly versatile wine. It’s a great bottle to share socially with friends in a relaxing environment. As a food pairing, this is an obvious match for most seafood dishes. For Chinese food, look to pair this with most seafood or shellfish. Cantonese styles of cuisine will always be more suitable for this type of wine.
