Paladino Pinot Grigio
Paladino Pinot Grigio is an impressive bottle from the Rocca family in Italy. At the end of 19th century, Francesco Rocca started his historical business in making and selling wine. In 1936 his son Angelo enhanced the wine production and built up a cellar in Nardò, Apulia. In the 1960’s the first bottling line was bought and thus started the distribution of products under the Rocca brand. Nowadays, Ernesto Rocca (the founder’s grandson) along with his sons Paolo, Marco, Luca and Matteo, share the duties and responsibility of running the family business with vineyards spread across all of Italy’s premium growing regions.
Region: Veneto
Grape Type: Pinot Grigio
ABV: 12%
Soil: Mineral-rich, alluvial and morainic soils are relatively deep and consist of small rocks, sand and clay. Minimal impact land care strategy on vineyards.
Weather conditions: Regionwide, on average, up to 50 inches of rain each year. Specifically, on these vineyards, it is less than half of this.
Wine Making / Ageing: The grapes for Paladino Pinot Grigio are harvested by hand. They are pressed to create the liquid for fermentation. The fermentation happens at temperatures between 16°C and 18°C. The wine is settled with cold stabilisation and filtration.
Tasting: This wine has a straw pale yellow colour. Its perfume is fresh and fruity; the taste dry and rightly sapid. Fresh crisp and pale. Apple and pear. Clean finish nice balance. A pleasant everyday wine.
Food Pairing: Perfect as an apéritif, it is ideal with seafood or cheese appetizers. For Chinese food, this bottle works well with lighter Guangdong style cuisine or anything that involves steamed or broiled fish and shellfish.
It is well-known to match with the great fish cuisine: fine crustaceans, baked fish, oven or grill, tasty fish soups and risotto. Great also with crêpes, soufflé and white meat.
