Barone Apassimento
This wine has the flavor of raisins, dried figs, dried plums and the aroma of spices such as licorice, coffee and pepper. The taste is round and full, with delicate and elegant tannins and chewy aftertaste. The aging potential is huge. It tastes better with Spanish ham, barbecue and pizza.
After the grapes are harvested by hand, after 3-4 months of natural air drying, the water evaporates by more than 40%, thus greatly concentrating the sugar, then slowly fermenting for more than 45 days, and finally storing in oak barrels for 18 months.
