Botter Prosecco
Botter Prosecco is a classic example of a DOC Prosecco, showing exactly why this style of Italian sparkling wine has grown in popularity over the past 10 years.
It’s produced by Botter S.P.A. a producer that we have worked with on a number of great wines over the past few years. Botter has been crafting wines since 1928 and now have a wine portfolio of great quality but pocket-friendly wines. Soil: Mineral-rich, alluvial and morainic soils are relatively deep and consist of small rocks, sand and clay. Some areas are particularly rich in iron oxides, giving the soils and rust-red colour
Weather conditions: Temperate, mitigated by the sea. The nearby chain of the Alps protects the vineyard from the colder northern winds. Winters are cold and wet, summers are hot and sultry with medium temperature excursions.
Wine Making / Ageing: The soft pressed must is stored in steel tanks for the static cold decanting. The fermentation with selected yeasts is made at a controlled constant temperature of 18 °C and is completed in 8-10 days. After a storage period, the winemaker studies a skilled coupage to achieve the Prosecco Spumante basic cuvée. Afterwards, the wine is filtered and stored in steel tanks with the addition of saccharose and selected yeasts for the second fermentation (Martinotti-Charmat method) at a controlled temperature of 14-15 °C. Once the wine has reached the required pressure levels, alcohol and sugar content, the wine is refrigerated and cold stabilized, filtered and controlled before bottling.
Tasting: Botter Prosecco is a pale light yellow colour with a typical crisp and delicate pearlage. It has a complex bouquet with fruity notes of peach, green apple with scents of acacia and lilac. Fresh and light on the palate, with balanced acidity and body; harmonic with a long persistent aftertaste
Food Pairing: Perfect as an aperitif, it is a perfect combination to hors-d’oeuvres and delicate first courses. Also wonderful with sushi, fish and shellfish. Its mellow versatility also brings flavorful sparkle to a small plate brunch or your favourite rich dessert. For Chinese food, this bottle works well with really hot chilli spice dishes. Sichuan and Hunan styles, or hotpot where the broth will be loaded with chilli pepper.
