Lambrusco Rose Quercioli DOC
Medici Ermete Lambrusco Rose Quercioli Dolce is from the Medici winery. A family owned vineyard that for over a century, has been producing a top-of-the-range Lambrusco. This is one of their flagship wines – an exceptionally well crafted dry sparkling wine.
It all began with Remigio, who founded a wine cellar in the late nineteenth century, with the aim of making the most of the family vineyards, located between the Via Emilia and the first of the hills in the Enza valley. Remigio’s son Emete expanded the business and consolidated its reputation, before handing over the reins to his sons Valter and Giorgio. They carried on the work of their father and grandfather by extending sales of the wine further.
Today the company owns 60 hectares of land spread out among the finest wine-growing areas in the Emil Emilia-Romagna. Now run by the fourth generation of the Medici family, the winery boasts extensive experience both in the vineyards and in the winery. This allows them to make the finest of wine from the grapes they grow. Medici Ermete is regarded as one of Italy’s best Lambruscos.

Weather conditions: The top of the plain and the foothills of the Emilia area are particularly suitable for growing grapes, thanks to the microclimate present there, as well as the features that characterise the clayey soil. Here, the Medici Ermete wineries have two of their finest wine-growing estates: Tenuta Rampata and Tenuta Quercioli.
Wine making / Ageing: The vines that go into making these Lambrusco Rose Quercioli Dolce wines grow in the shade of castles and ancient hamlets, and the Medici Ermete wineries are located in Gaida, on the Via Emilia, just a few kilometres from the vineyards. Grapes are harvested and pressed to create the liquid for fermentation. The fermentation happens at temperatures between 22°C and 24°C to ensure more colour and structure. Post fermenting maceration for about one week. Complete malolactic fermentation.
Tasting: Lambrusco Rose Quercioli Dolce has pretty aromas of crushed berries and rose petals follow through to a medium body, a soft and frothy palate and a clean finish. Dry aftertaste. Delicious.
Food Pairing: This classic Italian Sparkling wine, has the perfect balance to cut through the heavy chilli spices of meals from both Hunan and Sichuan. For western foods, look to pair this with fish, seafood, shellfish and sushi.
