Las Colinas Carmenere
Las Colinas Carmenere is crafted by the Siegel vineyard. The vineyard has more than 700 hectares planted in vineyards distributed in 7 farms strategically located from the foot of the Andes mountain range in Los Lingues, to the most coastal zones like Peralillo and very close to the Pacific Ocean in the Leyda valley.
Region and/or Appellation: Aconcagua – Leyda Valley
Soil: Clay and sandy to the east; granite and clay to the west.
Grapes: 100% Carmenere
ABV: 13.5%
Weather conditions: Mediterranean, 215 mm (8.5 in) of rainfall per year.
Wine making / Ageing: Grapes are harvested and pressed to create the liquid for fermentation. The fermentation happens at temperatures between 26°C and 28°C to ensure more colour and structure. Post fermenting maceration for about one week. Then the juice is separated from the skins. 15% of the wine was matured in oak barrels. Complete malolactic fermentation.
After the blend was done a soft clarification, a cold stabilisation and a filtration were done. When bottling an on-line filtration was done through a plate and membrane to assure microbiological stability.
Tasting: Las Colinas Carmenere has a lovely and intense ruby colour. It has a pleasant aroma with reminds of black fruits, black pepper and some tones of vanilla. In the mouth this wine is fresh and well rounded, good concentration and persistency.
Food Pairing: We would recommend this wine to go with most meat based dinners. It has a great pairing for both beef and lamb and would work well with hotpot, spicy foods and northern style food. For international foods, this works with Italian pasta dishes based with meat or red sauces, it works well with Spanish tapas, Mexican food and Indian food.
