Weather conditions: The Puglia region, the “heel” of the boot of Italy, lies at the heart of the Mediterranean, caressed by the sun and the sea breezes, and its excellent climate and variegated landscapes have for centuries provided the ideal conditions for the development of excellent wine-growing districts and for the growth of avant-garde wineries
This beautiful region is blessed with remarkable landscapes of palm trees and cactus plants, sunshine, blue skies and a dream-like coastline on crystal-clear waters.
Wine making / Ageing: The Primitivo grapes are carefully selected from low-yielding vineyards in the Communes of Avetrana and Manduria, in the Province of Taranto, southern Puglia. All of the vines are trained in the “Alberello Pugliese” system. Vine planting density is around 5500 vines per hectare with an average yield of 1.4 kg per vine. The vines are an average of 25 to 35 years old.
The grapes are carefully picked by hand in early/mid September. In late August, when the grapes have reached perfect maturity, a special technique called “il giro del picciolo”(the twisting of the stem) is applied to approximately 50% of the grapes. This consists in twisting the stem of the grape bunches so that no further nourishment reaches the grapes, thus inducing a natural drying of the fruit on the vine. The grapes are left on the plant for approximately 12 days (along with the other grapes which benefit from the late harvesting) and lose approximately 25-30% of their weight in water, concentrating their flavours and aromas.
After de-stemming, the grapes are not crushed, allowing them to remain intact, reducing damage to the skins and optimising colour extraction. Fermentation takes place in stainless steel tanks at a controlled temperature of 23-25°C for 8-10 days. Frequent remontage and delestage are carried out during the fermentation in order to achieve soft extraction of aromas and gentle tannins. After racking, malolactic fermentation is induced. Approximately 25% of the wine is aged for 8 months in French and American barriques.
Tasting: THIS WINE MUST BE DECANTED for at least 30 minutes (1 hour if time permits) to allow Maxale Primitivo to develop it’s intense aromas of red fruits heightened by spicier scents , A well-balanced taste with very good length.
Food Pairing: Maxale Primitivo is a highly versatile wine. It’s a great bottle to share socially with friends in a relaxing environment. As a food pairing, this is an obvious match to most Mediterranean food dishes. For Chinese food, look to pair this with most meals that have red meat. This wine will not pair well with fish or dishes that have a lot of chilli.
