Weather conditions: The majority of South Eastern Australia has the arid and semi-arid climates. The southern coastal parts of the state have a Mediterranean climate with mild wet winters and hot dry summers. The highest rainfall occurs along the southern coasts and the Mount Lofty Ranges (with an average annual rainfall of 1,200 millimetres (47 in) in the vicinity of Mount Lofty)
Wine making / Ageing: All grapes are manually harvested with a manual first press. Temperature controlled fermentation done in vats. Filtration and bottling with their own facilities.
Tasting: Watercolour Chardonnay is a pale straw colour with fine green hues in a perfect light. Ripe white peaches and melon on the nose. Lifted florals and lime in the background. Rich and fresh fruits on the palate with a fine acidity. Ripe apricots and rock melon flavours supported by the delicate peach all the way through the taste.
Food Pairing: Watercolour Chardonnay has a well balanced acidity is perfectly suited to cut through the fire of those chilli spice dishes. For western food, this balances well with fresh water fish, poultry in light sauces, and almost any interpretation of salads.
