Weather conditions: The majority of South Eastern Australia has the arid and semi-arid climates. The southern coastal parts of the state have a Mediterranean climate with mild wet winters and hot dry summers. The highest rainfall occurs along the southern coasts and the Mount Lofty Ranges (with an average annual rainfall of 1,200 millimetres (47 in) in the vicinity of Mount Lofty)
Wine making / Ageing: All grapes are manually harvested with a manual first press. Temperature controlled fermentation done in vats. Wine is matured on lees with regular stirring. Filtration and bottling with their own facilities.
Tasting: Watercolour Sparkling Brut Cuvee is a clear, pale golden coloured wine. Refreshing and light citrus on the nose with underlying sherbet. Soft, clean, citrus fruits with hints of apple and melon on the taste.
Food Pairing: A great sparkling wine to cut through the fire of those chilli spice dishes. It’s also strong enough to stand alone as an appetiser for guest before dinner. For western food, this balances well with briney shell fish.
