Jervois Petit Verdot is a handcrafted wine from Golden Heights in South Australia. This is part of a range of wines that we have from the Jervois Estate and they really do show how Australian wine producers really are taking their craft and giving traditional old-world vineyards and serious challenge to stay ahead of the game.
Petit Verdot probably predates Cabernet Sauvignon in Bordeaux. There are records of it in the eighteenth century, but its characteristics suggest an origin in much hotter climates than the Gironde (the region where Bordeaux is located). It is one parent of the grape Tressot, (the other parent being Duras, a grape from the upper Tarn valley near Toulouse).
While Petit Verdot was once considered a blending grape, growers in Australia, Argentina, Chile and the United States are beginning to champion this variety in its own right. Petit Verdot thrives in regions with long days and lots of sun, which makes many Australian wine regions perfect for this variety. The Barossa Valley, McLaren Vale, Langhorne Creek and Golden Heights (all in South Australia) have all excelled and are renowned for this emerging style.

Soil: Limestone rich soils tend to lean towards more refined and finer wines.
Weather conditions: Cooler air coming in from the coastal area near Adelaide do create an interesting microclimate for grapes that will eventually be finer wines.
Winemaking / Ageing:
Tasting: THIS WINE MUST BE DECANTED for at least 60 minutes (more if time permits) to allow it to develop its intense aromas of lavender, rosewater, musk, violets and fruity banana esters. Red fruits with fennel seed and star anise with white blossoms, alongside sweet ripe red and blackberry notes
Food Pairing: When pairing Jervois Petit Verdot with food, keep the acid and tannin level of the variety in mind. Rich and strongly flavoured foods are the best accompaniments. Experiment with barbequed lamb chops, pork spare ribs, duck and other rich meats. Hearty casseroles and mature cheeses also work well.
This same logic should be applied when pairing with Chinese foods. Rich, strong flavours will work with this wine. Avoid light or delicate styles of food. This wine would overpower most dishes that are either Guangdong or Fujian style.
